The Final Course: Cherry Chocolate Popcorn Balls

We’ve reached the end of our three-course journey and of course, all’s well that ends well. Since the third course is dessert, there’s no doubt we’re going to put a smile on your face.
You’ve polished the chicken satay, scraped your plate off every last bit of Quinoa; so now we’re keeping things real light and airy, what’s more? It is a no bake, no freeze quick treat!

 

So light and airy that one of the main ingredient is popcorn! We like to call it, Cherry Chocolate Popcorn balls. They are easy to make, delicious to eat and they’ve got their fair share of healthy elements. So let’s get cooking!

 

You will need:

¼ Cup Honey

¼ cup Honey Peanut Butter

6 heaped cups of Salted Popcorn
3 tablespoons Chocolate chips

2 tablespoons Chocolate Pretzels or ½ cup rice crispies (or please suggest an indian equivalent for crunchy pretzels)

2 tablespoons dried cherries (or berry of your choice)

 

Prep:

Keep a tin or tray lined with butter paper ready to place the finished products on.

Take a medium bowl and fill it up with ice and water.

Keep a bowl ready for mixing.

 

Directions:

 

Pour your popcorn into a bowl.

 

Now, take your honey and peanut butter, mix them together and add them to a small saucepan. Cook it over medium heat, stirring gently but constantly. When the mixture starts boiling, continue stirring for 15 seconds and turn of the heat.

 

Immediately pour the mixture over the popcorn and mix it gently with a spatula until the popcorn is well coated. Gently stir in the chocolate pretzels and finely chopped cherries.

 

Now dip your hands into the ice water. Be quick with this step and gently make small scoops of the mixture to turn into small balls. Place the balls into your baking tin with butter paper. Make sure your hands stay cool so that the heat doesn’t transfer and the balls don’t start opening up.
Wrap each individual ball in a cling wrap in case you’ve got left overs, which we doubt (These cherry popcorn balls are super fun to munch on!).
